Italian and Neapolitan dishes

Italian cuisine is famous all over the world. The Italians themselves played the main role in this. They pay great attention to what they eat. All Italian dishes are prepared only from fresh ingredients. The process of eating itself is a real holiday for Italians, who do not like to rush. They enjoy every bite for a long time. Italian cuisine is not only tasty, but also healthy. They combine cereals, vegetables, cheese, herbs, seafood and, of course, olive oil. Now let's move on to Neapolitan dishes:

Neapolitan style pizza - Pizza "Margherita" (Pizza alla Napoletana) - The following ingredients are used to prepare it: flour, tomato sauce, mozzarella cheese. It is distinguished by a more fluffy dough than usual, crispy edges and a soft center:

It should be noted that Naples is considered the birthplace of pizza. The first pizza appeared here in 1522. As for “Margherita,” it went like this: In 1889, King Umberto I and his wife Margaret of Savoy went on vacation to their summer residence in Naples. The Queen wanted to try what the common people ate. Apparently she had already heard about pizza and asked her chef to make it. The cook didn't know how to make pizza, so he immediately turned to a local baker, namely Rafael Esposito. Together, three types of pizza were prepared: soft - with ham, cheese and aromatic spices, spicy - with tomatoes, oil and garlic, and simple - with tomatoes, basil and mozzarella cheese. It was the third pizza that the queen liked - it reminded her of the Italian flag. Green, red and white colors symbolize patriotism, love of the Motherland and the spirit of the common people. Naturally, not only she, but the entire royal family liked the taste. The Queen personally wrote a letter of gratitude to Rafael Esposito, who almost shed tears from excess of feelings, and he named his creation “Margarita” in honor of the Queen, and framed the letter and hung it above the entrance to his cafe. This is how Margarita gained popularity.

A small pizza is called a pizzetta, and the chef who prepares the pizza is called a pizzaiolo.

I would like to add that a pizza festival is held in Naples every year.
